You may use fresh or frozen cauliflower rice in this casserole. If using frozen cauliflower rice, you will want to thaw it completely before baking. This will eliminate excess water in the casserole. To thaw, simply microwave for 1 to 2 minutes and drain the excess water. You can even put the thawed cauliflower rice in paper towels and squeeze out any excess water, similar to frozen spinach.

My husband and I really enjoyed this casserole! I took your suggestion and added extra sharp cheddar cheese--1/2 C. for the casserole and 1/4 C. sprinkled on top. I also threw in 2 T. grated Parmesan cheese and 1/4 tsp each of dried thyme and dried tarragon. We both agreed this one goes into the monthly rotation.

Hi! You probably could but I haven’t tried it myself. If you do, just make sure you use fresh cauliflower rice instead of frozen or it’ll be too watery after baking.
