It’s September 1st. Starbucks is already selling Pumpkin Spice Lattes. College football kicks off today. And a few of my friends have already decorated their homes for fall.

So, it MUST be fall, right?

The thermostat says otherwise. I think it’s going to be 85 degrees today. Ugh!

The humidity can take a hike! I’m ready for crisp air and falling leaves!

I’m not on the decorate-as-soon-as-September-rolls-in team. I like to wait till the end of the month.

BUT (there’s always a but) I like to start making alllllll the fall foods when football kicks off. Soup, chili, pumpkin roll. Gimme it all!

We’re diehard Tennessee fans in our house! GO VOLS!

I’m pretty sure my husband asked me on out for our first date because I had on a VOLS hat. Love at first sight! Haha!

It’s become tradition that game day Saturday’s I make a bunch of snacks and we munch while we watch our team. Chili and cornbread are often on that menu. Man food. {insert manly grunting sound}

My original cornbread recipe was the inspiration for this creation.

Maple and bacon are knowingly a winning combination so I thought, hey, lets change up the OG a little bit and see how it comes out.

You never know, okay I never know, how a gluten free recipe like this is going to turn out.

As much as I cook, I still get nervous that too much liquid or too much fat is going to destroy a recipe.

But what came out of the oven was pure deliciousness, friends.

Pure deliciousness.

My husband basically bowed down to me when he first tasted these muffins.

It goes without saying that there isn’t actually cornmeal or grain in this recipe.

Maple Bacon Cornbread Muffins

Ingredients
  

  • 1.25 cups almond flour
  • 4 tbsp unsalted butter softened
  • 1 tsp baking powder
  • 1/3 tsp salt
  • 3 eggs
  • 1 tsp sweetener
  • 2 tbsp sugar free maple syrup
  • 1/4 cup + 1 tbsp bacon bits seperated

Notes

  1. Preheat the oven to 400 degrees. Grease muffin tin and set aside.
  2. Combine almond flour, baking powder, salt, and sweetener in a bowl.
  3. Add butter to dry ingredients and use a fork to work it into the mixture. A dough should form similar to cookie dough.
  4. Add eggs and maple syrup and mix with a fork until combined. There will be lumps in the batter.
  5. Fold in 1/4 cup of the bacon bits.
  6. Divide batter into 8 muffin cups. Use remaining 1 tbsp bacon crumbles to sprinkle on top of each muffin.
  7. Bake for 10-13 minutes until the tops are golden brown.
