Maple Bacon Cornbread Muffins

A sweet and salty maple keto bacon cornbread that is grain-free, gluten-free, and keto-friendly. Only 2 net carbs per muffin. The best sweet keto cornbread!

1.25 cups almond flour 4 tbsp unsalted butter softened 1 tsp baking powder 1/3 tsp salt 3 eggs 1 tsp sweetener 2 tbsp sugar free maple syrup 1/4 cup + 1 tbsp bacon bits seperated
Preheat the oven to 400 degrees. Grease muffin tin and set aside.
Combine almond flour, baking powder, salt, and sweetener in a bowl.
Add butter to dry ingredients and use a fork to work it into the mixture. A dough should form similar to cookie dough.
Add eggs and maple syrup and mix with a fork until combined. There will be lumps in the batter.
Fold in 1/4 cup of the bacon bits.
Divide batter into 8 muffin cups. Use remaining 1 tbsp bacon crumbles to sprinkle on top of each muffin.
Bake for 10-13 minutes until the tops are golden brown.
