You know what always brings the party on Halloween? Deviled Eggs! I mean, it’s right there in the name. DEVILED eggs. No food is more sinister-sounding than that. Still, you can have a lot of fun with them in October, as I have by making these themed delights. They’re colorful and fun, like a sneak peek into a witch’s tricky crystal ball, and let’s not forget about that super creamy, green mix on the inside. Honestly, they’re just the coolest and yummiest little devils—perfect for a fun-filled Halloween party.

It’s like taking the deviled eggs you know and love (or my Southern Deviled Egg Salad) and giving them a fun, Halloweenie spin. The base recipe is all there—the yolks, mustard, and mayo—but with a little (or a lot, whatever you like) green food coloring for that creepy-cute vibe.

Are Halloween Deviled Eggs Keto Friendly?

Halloween Deviled Eggs, like regular deviled eggs, totally pack a protein punch and have little in the way of carbs, making them the ideal keto-friendly snack. They also have a bunch of mayo, which can be high in fat and calories, but if you’re on a keto diet, this really won’t be much of a concern. The food coloring and mustard contain a negligible amount of carbs, while the few grams of carbs found in the sesame seeds are mitigated, thanks to the fiber, so it comes to one gram of net carbs.

Ingredients

In Halloween Prep mode? Good. Here’s what you’ll need.

  • 8 hard-boiled eggs
  • 2 cups water
  • 2 tsp Dijon mustard
  • ¼ cup mayonnaise
  • 6 drops of blue food coloring
  • 4 drops of green food coloring
  • salt and pepper
  • 1 tbsp black sesame seeds (optional)

Instructions

  1. In a deep bowl, mix the water and food coloring.
  2. With the back of a spoon, smash the eggs completely to crackle the shell.
  3. Add the crackled eggs to the colored water and place in the fridge for 2 hours. If the eggs aren’t completely submerged, turn them over halfway through so that all sides have been submerged.
  4. Take the eggs out of the colored water, dry them off, and then carefully peel off the shell.
  5. Gently slice the eggs in half, then scoop out the yolks. Add the yolks to a blender with the mayonnaise, mustard, green food coloring, and salt and pepper. Blend until smooth.
  6. Scoop the green egg-yolk mix into a piping bag and fill the hole from the yolk in the egg white.
  7. Sprinkle with back sesame seeds and serve.

Serving Suggestions

Create a hauntingly delightful Halloween platter by pairing these Halloween Deviled Eggs with other festive nibbles like stuffed mini pumpkins, ghoulish guacamole, and ‘bat’ wings (barbecued chicken wings). Add some crunchy crudité and you have a thrilling feast that’s perfect for kids and adults alike! For those of you who are trying to avoid non-keto treats during this time of year, I’ve compiled a short list of tips that have helped me overcome my cravings for caramel apples and fun-sized candies.

Tips & Tricks to Making Perfect Halloween Deviled Eggs

  • When crackling the eggshells, use a spoon’s back and lightly tap all over. Be careful not to hit too hard, as we don’t want to break the shell entirely.
  • The deeper your bowl for dyeing, the better. It allows the eggs to be fully submerged for a uniform, all-around color.
  • Let the eggs rest in colored water in the fridge for at least 2 hours, ensuring vibrant color penetration. Don’t rush the dyeing process.
  • The smoother the filling, the better your eggs will taste, and the easier the filling will be to pipe back into the egg whites.
  • Use a piping bag or a plastic bag with the corner snipped to add the yolk mixture back into the egg white.

FAQs & Substitutions

Can I ditch the food coloring?

Sure. I mean, it’s just coloring. It has no nutritional value and it doesn’t affect the taste in any way. So if you’re not feeling it, leave it out.

What’s the best mustard for the job?

If we had to pick, we’d say Dijon mustard, which has a tangy and slightly hot tinge to it. But it’s a matter of taste; if you’re into yellow mustard or honey mustard, go for it!

Can I mix things up with this recipe?

I would be disappointed if you didn’t! Add a sprinkle of smoked paprika for an extra kick, or chopped pickles or pickle relish for a fresh new taste. If you can’t find black sesame seeds, chives or paprika should do the trick, too!

How can I perfectly hard-boil eggs for this recipe?

For the perfect hard-boiled egg, lay your eggs down in a pot and drown them in water. Bring the water to a bubble, switch off the heat and let your eggs hang in the hot water for about 9 minutes for a fully cooked yolk. And don’t forget to dunk them in cold water right after—this ceases the cooking process and makes them a cinch to peel.

How to Prep and Store Halloween Deviled Eggs

Given how busy you’ll be in the leadup to Halloween, it’s a good thing these deviled eggs can be made a day early. Plop the unpeeled, dyed eggs in the fridge to chill. Whip up the filling too, but keep it separate in a tightly-sealed Tupperware. When it’s showtime, slice those eggs open, scoop in the filling, and add your garnish. If there are any leftovers, refrigerate them in a covered dish and munch on them within two days. And don’t bother warming them up; these eggs are best chilled.
