Make a restaurant quality dish at home with this elegant keto cauliflower rice recipe. Mushrooms, artichokes, and garlic come together for a keto side dish that is (at home) date night worthy.
Add oil to a large skillet over medium heat. Once heated, add onion, artichoke hearts, mushrooms, garlic, salt, and pepper. Sautè 4 to 5 minutes until soft and fragrant.
Add cauliflower rice and stir to combine. Continue stirring 3 to 4 minutes while the rice cooks.
Add the wine, reduce heat to low, and simmer until all liquid is absorbed, about 10 minutes. Stir occasionally.
Remove from heat. Garnish with fresh herbs if using. Serve warm.
