  • Preheat oven to 425 degrees. Line a baking sheet with wire rack and set aside.
  • In a skillet over medium low heat, scramble 2 well beaten eggs until just done. Break the cooked eggs up into small pieces with a food chopper or knife.
  • In a large mixing bowl, add all ingredients. Use a wooden spoon to combine everything until just mixed. Do not over work the meat mixture.
  • Use a cookie scoop to measure 24 even sized meatballs. Roll the meatballs in your hands and place on the cookie sheet.
  • Bake for 25 minutes. Let cool 5 minutes before eating.
  • Serve with maple syrup for dipping.
