Ingredients
  

For the casserole:

  • 12 ounces sausage patties about 8 patties
  • 5 slices bacon cooked and crumbled
  • 8 eggs
  • 1/2 cup half-and-half
  • 1 cup shredded cheddar cheese

For the cornbread:

  • 1.25 cups almond flour
  • 1 teaspoon baking powder
  • 1/3 teaspoon salt
  • 3 eggs
  • 8 tablespoons butter melted

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9x13 baking dish and set aside.
  • In a skillet over medium high heat, fry the sausage patties each side until done, about 5 to 7 minutes. Remove from the skillet and let cool. Once cool enough to touch, slice in half.
  • Lay the sausage patty halves on the bottom of the baking dish.
  • In a medium mixing bowl, combine all ingredients for the cornbread and whisk until combined. Use a measuring spoon to place dollops of batter all over the sausage patties. Do not worry about perfection.
  • Sprinkle the bacon crumbles on top of the cornbread layer.
  • Sprinkle the cheese on top of the bacon layer.
  • In a large measuring cup, whisk the eggs and half-and-half together. Pour evenly over the entire casserole.
  • Bake uncovered for 25 minutes. Let rest 5 minutes before serving.
