Ingredients
  

  • 6–8 fresh eggs
  • 1 knob butter (approximately 2 tbsp)
  • salt and pepper

Optional toppings:

  • asparagus sauteed
  • chives
  • microgreens
  • feta cheese

Instructions
 

  • Preheat the oven to 350°F.
  • Use the butter to grease an oven-safe dish, about 6" wide and 3" deep.
  • Break all of the eggs into the buttered dish.
  • Sprinkle salt and pepper over the eggs and pop into the hot oven. Bake for 8–10 minutes or until the white is just cooked.

Notes

  • For the best taste and a perfect soft yolk, ensure your eggs are fresh.
  • Make your clean-up stress-free by generously buttering the dish before adding your eggs.
  • All you need is a set white and a still-runny yolk. Keep a close eye on them in the oven.
