Ingredients
  

  • 1 Large Eggplant washed
  • 2 Tbsp Olive oil
  • 1 tsp Salt

Instructions
 

  • Preheat the oven to 425 F
  • Cut the eggplant into about 1 inch cubes.
  • Line a baking tray with parchment paper and toss with salt and olive oil.
  • Place in the oven and bake for 20 minutes until golden and soft all the way through.
