Air Fryer Zucchini Chips (Low Carb)

These keto friendly crisps are low in fat and I achieved this by cooking them in my airfryer, so that the excess oil can drip off and you are left with a more crispy chip rather than baking them in the oven where the oil staying in the tray.

Ingredients
  

  • 4 small colorful zucchinis
  • 2 tbsp olive oil
  • 1 tbsp mix of salt chili and coriander

Instructions
 

  • Wash and dry your zucchini and using a mandolin and holding your zucchini at an ancle slice them into chips, making sure to keep your fingers away from the blade.
  • Drizzle in the oil and spice mix and rub all over to coat the zucchini chips well.
  • Place in your air fryer in a single layer in the basket, make sure they are not covering each other or you will end up with soggy chips. Fry at 375F for 7- 8 minutes until the chips are slightly browned and crispy. They will get more crispy as they dry.
  • Cook the zucchini in batches until you have cooked them all, and lay them out to dry nicely before serving or storing.
  • Enjoy with a healthy dip or snack on them on their own.
