Low Carb Overnight French Toast

Overnight French toast that's only 2 carbs per serving! This recipe uses real cinnamon bread and sugar-free cream cheese glaze!

Ingredients
  

  • 1 large loaf LC Foods Cinnamon Bread
  • 8 tbsp butter melted
  • 1/2 cup Sukrin Gold brown sugar substitute
  • 1 cup + 1 tbsp unsweetened vanilla almond milk
  • 4 eggs
  • 1 tsp + 1/4 tsp vanilla extract
  • 3 tbsp cream cheese
  • 1/3 cup powdered sweetener
  • sprinkle of cinnamon

Notes

  1. Slice loaf of bread into 12 thick Texas toast-style slices. You may do 24 regular slices if you prefer. (that will change the serving size to 2 pieces)
  2. Whisk melted butter with Sukrin Gold. Use a spoon to spread a little of the mixture on the bottom of a 9×13 baking dish. It does not have to be completely covered.
  3. Whisk 1 cup of the almond milk, 4 eggs, and 1 tsp of the vanilla extract together.
  4. Arrange half of the bread on the bottom of the baking dish. Pour half of the egg mixture over the bread. Layer remaining bread on top and repeat.
  5. Cover with foil and refrigerate overnight (at least 8 hours).
  6. Bake at 350 degrees for 25 minutes.
  7. While in the oven, prepare the glaze by whisking 1 tbsp almond milk, 1/4 tsp vanilla extract, 3 tbsp cream cheese, and 1/3 cup sweetener.
  8. Pour over hot French Toast. Serve with sugar-free maple syrup.
