Ingredients
  

For the Peaches

  • 1 pound fresh sliced peaches
  • 3/4 cup brown sugar substitute
  • 4 tablespoons butter
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1/4 teaspoon xanthan gum

For the Crust

  • 1.5 cups almond flour
  • 4 tablespoons butter softened
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup monkfruit or 1/2 cup powdered monkfruit

Instructions
 

  • Preheat oven to 375 degrees.
  • In a cast iron skillet over medium heat, melt butter. Add sliced peaches and brown sugar subsitute and stir to coat. Let the peaches cook while stirring continuously until slightly softened, about 5 minutes.
  • Remove from heat and sprinkle xanthan gum over the peaches and stir until dissolved. Set aside
  • In a medium mixing bowl, add all ingredients for the crust. Use a fork to work everything together until a dough forms.
  • Seperate the dough into 4 or 6 equal balls. Use your hands to pat them into thin disks. Lay the dough discs on top of the peaches in the skillet, overlapping if necessary. Do not worry about completely covering the peaches with the dough.
  • Bake for 25 minutes.
  • Let cool 5 to 10 minutes before serving.

Notes

If using frozen peaches, thaw first. Canned or jarred peaches are not recommended.
