sugar free maple syrup [

apple cider vinegar

Instructions
Place the pork loin fat side up in the crockpot (or Instant Pot if using).
Use a basting brush to evenly brush on the dijon mustard on top of the pork loin. Be sure to coat the entire top.
Sprinkle the salt, brown sugar, nutmeg, and pepper on top of the pork loin. If some falls into the pot, that is okay.
Drizzle the sugar free maple syrup on top.
Add the water and apple vinegar to the pot, but not directly on top of the pork loin.
Cook on low for 6 hours or high for 3 hours.
If using an Instant Pot, cook on high pressure for 45 minutes and quick release the steam.
Shred the finished meat with two forks. Use a spoon to dress the finished meat with the reserved pan juices. Garnish with fresh parsely, if desired.
