This halfway homemade keto casserole is kid friendly and mom approved! Store bought pulled pork saves time in this easy and fast back to school low carb casserole.

  • Preheat oven to 350 degrees.
  • In a large bowl, add the pulled pork, okra, and bacon and toss to combine.
  • Add 1 cup of the bbq sauce and toss to combine. Transfer the mixture to an oven safe skillet (I used cast iron) or 9x9 baking dish.
  • Add the remaining 1/2 cup of bbq sauce to the top of the mixture.
  • Spread the cornbread batter on top of the pork mixture.
  • Bake for 30 to 35 minutes. Let rest 5 minutes before serving.

This recipe reheats well and is great for meal prep. Store in the refigerator up to 1 week.
