Instructions
Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
In a large bowl or stand mixer, use the paddle attachment to cream the butter and monkfruit until fluffy, about 1 minute.
Add the almond flour, baking soda, baking powder, chocoalte collagen, and salt and mix until combined.
Add the vanilla extract and egg and mix again.
Use a cookie scoop to scoop out 14 even sized cookies. Roll in between your hand and place on the baking sheet. Use two fingers to gently press the cookies down. Top with sugar free chocoalte chips, if using.
Bake for 10 to 11 minutes or until set.
Let the cookies cool on the baking sheet for 2 minutes before removing to wire rack to cool completely.
