Ingredients
  

For the Brownies

  • 2 cups almond flour
  • 1/4 cup cocoa powder
  • 1/3 cup powdered monkfruit or 1 cup erythritol
  • 1 teaspoons baking powder
  • 3 eggs
  • 1 cup mayonnaise
  • 1/4 cup natural peanut butter no sugar added
  • 1 teaspoon vanilla extract
  • 1/4 cup water

For the Peanut Butter Layer

  • 1/2 cup natural peanut butter no sugar added
  • 1/4 cup + 1 tablespoon powdered monkfruit
  • 45 g sugar free chocolate chips or 4 ChocZero dark chocolate squares

Instructions
 

  • Preheat oven to 350 degrees. Grease 8"x8" baking dish or line anwith parchment paper and set aside.
  • Combine the dry ingredients in a large bowl. Use a mixer to whisk out any lumps.
  • Add the eggs and mayonnaise and whisk until combined.
  • Add the peanut butter and vanilla and whisk until combined.
  • Add the water and whisk until combined.
  • Transfer the batter to the prepared baking dish. Bake for 30 minutes. A toothpick should not come out clean after baking. While the brownies are cooling, prepare the topping.
  • In a medium bowl, whisk the peanut butter and monkfruit until the mixture is dry and slightly crumbly.
  • Add the chocolate to a microwave safe bowl and microwave in 10 second intervals, stirring between each, until the chocolate is melted.
  • Use an offset spatula and spread the peanut butter layer on top of the cooled brownies. If the top of the brownies are not even, flip onto a plate and spread on the smooth surface.
  • Spread the melted chocolate on top of the peanut butter layer. Let sit 5 minutes for the chocolate to set up.
  • Cut into 12 pieces.

Notes

Store in an airtight container up to 1 week. No refrigeration needed.
