Savory Crustless Quiche

Ingredients
  

  • 8 eggs
  • 8 slices bacon
  • 1/4 cup + 1/8 cup half n half
  • 2 ounces diced onion
  • 1 clove garlic minced
  • 1 cup shredded cheddar cheese
  • pinch of salt and pepper

Instructions
 

  • Preheat oven to 400 degrees. Line a cookie sheet with the bacon. When the oven has reached temperature, cook the bacon 15 to 20 minutes until it begins to crips.
  • Reduce the oven temperature to 350 degrees. Grease a 9" pie plate and set aside.
  • In a large bowl, beaten the eggs and half n half until thoroughly beaten.
  • Add the onion, garlic, and spices and whisk to combine.
  • Roughly chop the bacon and sprinkle around the bottom of the pie plate.
  • Pour the egg mixture on top of the bacon. Spread the cheese on top of the mixture.
  • Bake for 35 minutes or until the center is set.
  • Cool for 5 to 10 minutes before serving.

Notes

Slice and freeze individual pieces for future grab and go! It will defrost by the time you get to work and are ready to eat!
