Ingredients
  

  • ½ lb. asparagus
  • 1 tbsp olive oil
  • 2 cloves garlic finely crushed
  • 1 cup cream
  • 1/2 cup mozzarella grated
  • ¼ cup Parmesan grated
  • salt and pepper

Instructions
 

  • Heat the oven to 350°F.
  • Pour the oil into an oven-proof dish and add the asparagus, garlic, cream, and salt and pepper. Sprinkle the cheese on top and bake for 10-15 minutes or until golden brown and bubbly.

Notes

  • Look for firm, bright green stalks with tight tips. This indicates fresh asparagus and should roast beautifully.
  • Always trim the rigid ends off your asparagus spears before roasting them. They should easily snap off but feel free to use a knife for a clean cut.
  • For a deeper garlic flavor, heat your olive oil with the crushed garlic before tossing it with the asparagus.
  • You want cheese that easily melts. Mozzarella and Parmesan are two such cheeses that will turn out all gooey and creamy. The ratios are up to you.
  • When the dish is almost done, keep a close eye on it to avoid the cheese burning or the asparagus overcooking.
