As an adult now raising my own family, one thing I look forward to year after year is passing down traditions to my kids. 

The sweet smell of nostalgia that permeates the house is my most favorite. 

When I was a child, my mom would make homemade peanut butter balls every Christmas, and only at Christmas. 

They weren’t anything fancy, quite the contrary, but oh were they scrumptious. 

I remember asking my mom for that recipe one year and I was shocked to learn that you had to use edible wax to make them (this was before keto, by the way). 

Wax? Really? That little revelation ruined them for me.

As an aside, I’m sure there are things in many of the foods I used to enjoy that would shock me today but that is neither here nor there.

Now I live in the northern portion of Kentucky, very close to Ohio, the Buckeye state. 

Do you know what a buckeye is? Me either. Well actually, I think it’s some kind of nut that falls from a tree, similar to an acorn. 

Folks up this way like to leave a little opening in their peanut butter balls and call them Buckeyes, to resemble the state nut. 

I think that is preposterous but for the sake of nostalgia, I’ll let them have their missing chocolate peanut butter ball.

Making Your Own Sugar Free Peanut Butter Balls

These no bake keto peanut butter balls couldn’t be any easier to whip up. 

I love any recipe that doesn’t require an oven or stove, don’t you?

In fact, this recipe is so easy that you could include your kids in the process! It’s a great way to teach them about measuring.

You’ll need a food processor, some parchment or wax paper, a spatula, a spoon or cookie scoop, and a small bowl.

Let your food processor mix everything together, except the butter and chocolate chips, then use your spoon or cookie scoop to round out the balls. 

Flash freeze them so they’re easy to dip in the chocolate, refrigerate, and enjoy!

Why Should You Use Further Food Chocolate Collagen Peptides Instead of Cocoa Powder In These No Bake Peanut Butter Balls?

When I was developing this recipe, I knew I wanted to keep the carbs low which meant I needed to be careful of what thickeners (flours, starches, etc.) I used to bind the ingredients. 

Cocoa powder, coconut flour, arrowroot powder, and almond flour all have excess carbs. And they each have their own reasoning as to why they wouldn’t be the best choice for these no bake keto peanut butter balls.

Plus, too much cocoa powder would mean you’d need extra sweetener. If you’ve worked much with low carb sweeteners, you know that more is not always better.

Too much erythritol or monkfruit and you’ll have a funky after taste and nobody wants that.

Tips For a Successful Sugar Free Peanut Butter Ball:

Here are few things that will help you make the best no bake peanut butter balls ever!

  • Keep your hands cold while rolling out the balls. Run them under cold water and dry them with a paper towel if you start to feel clammy.
  • Use a thick and creamy peanut butter. Personally, I like Skippy Natural the best (the macros are the same as natural) but I’ve also made these with a natural (non-oily) peanut butter. Both work fine.
  • Flash freeze the rolled out balls so they’re easier to dip in the melted chocolate.
  • Keep them in the refrigerator until you’re ready to eat one. The chocolate will soften pretty quickly at room temperature.
  • If you want them a bit more crumbly or dry, try adding a tablespoon or two of coconut flour, chopped peanuts, or unsweetened cocoa powder. You’ll need to recalculate the macros if you do this (but you should anyway because brands vary widely) 
  • Make these paleo friendly by swapping the butter for ghee!

  • In a food processor, combine peanut butter, sweetener, and chocoalte collagen peptides. Use a spatula to scrape the sides/bottom of the bowl, if necessary. The "dough" will come together in a large ball when it is done.
  • Use a small cookie scoop or 1/2 tablespoon measuring spoon to measure out the balls. Roll in between your hands and lay on a cookie sheet lined with parchment paper. You should get around 20 to 22 balls.
  • Put the cookie sheet in the freezer for 10 to 15 minutes to flash freeze the peanut butter balls.
  • Put the chocoalte chips and butter in a small bowl. Microwave for 15-30 seconds. Stir with a fork until it is completely melted.
  • Dip each peanut butter ball into the melted chocoalte, making sure to coat it entirely, and return to the baking sheet.
  • Place them into the rerigerator to harden.
  • Transfer to a bowl or platter. Keep in the refrigerator until ready to eat.
