Is there anything better than a juicy and saucy barbecue sandwich? I’m from down South where BBQ is a lifestyle and a birthright. Even though I technically still live south of the Mason-Dixon here in Kentucky, I’m on the northern edge of the Bluegrass state and BBQ up here just can’t hold a candle to what I grew up eating.

Years ago, I came across a fantastic recipe for Crock-Pot BBQ chicken. I wish I could remember where I got that recipe but it’s been so long. Nevertheless, it became a staple in my house. But when we started eating keto, I had to file that old recipe card away because “sugar-free” and “BBQ” don’t usually mix.

Until now, that is!

Ingredients

  • 1.5 lb boneless skinless chicken breasts
  • 1/4 cup water (for pot)
  • 1 cup sugar-free BBQ sauce
  • 1/4 cup low-sugar Italian dressing
  • 1/4 cup Sukrin Gold brown sugar substitute
  • pinch of salt

Instructions

  1. Place the chicken in Instant Pot with the water.
  2. Cook on HIGH pressure for 15 minutes.
  3. Quick release the steam.
  4. Shred the chicken with two forks.
  5. In a small measuring cup, whisk the BBQ sauce, dressing, and brown sugar substitute.
  6. Toss the chicken in the sauce.

*To make in the Crock-Pot: Combine all ingredients in the Crock-Pot. Cook on HIGH for 3 hours. Remove chicken and shred with two forks. Toss chicken in sauce. Turn heat to warm setting until ready to eat.

What To Serve With Sugar-Free Keto BBQ Pulled Chicken

I like to serve mine as nachos with pork rinds, shredded cheese, and a drizzle of extra BBQ sauce! You could also serve this as a sandwich on my Low-Carb Cornbread Muffins (adding keto coleslaw, of course!) with a side of Keto French Fries. You can put it in tacos as well. FAQs

Which BBQ sauce do you use?

I use G Hughes’ Sugar-Free BBQ Sauce. You’ll see it a lot on this site; it’s my go-to for all things BBQ.

Will BBQ sauce take me out of ketosis?

No. As I mention above, i use G Hughes’ BBQ sauce, which doesn’t contain any sugar. And this dish has 2 net carbs, which is well below the point you would be taken out of ketosis. Nevertheless, check the label of the BBQ sauce you choose to use as not all sauces are created equal.

Can I use frozen chicken?

Yes, though it gets tricky, as it may result in the outside of the chicken cooking much more quickly than the inside, resulting in uneven cooking and a rubbery chicken. When using a Crock-Pot, this is less of an issue; just extend the cooking time to 6-8 hours.

How To Store Sugar-Free Keto BBQ Pulled Chicken

Let it cool completely. Put it in an airtight container and store it in the fridge for up to 4 days. You can also freeze it for up to 3 months. To reheat, you can either let it thaw in the fridge or microwave it from frozen.
