Sweet keto BBQ chicken that can be made in the Crock-Pot or Instant Pot! This one is sure to be a family favorite!

 

Is there anything better than a juicy, saucy, BBQ sandwich? I’m from down South (and yes, South deserves a capital S) where BBQ is a lifestyle and a birthright.

Even though I technically still live south of the Mason Dixon here in Kentucky, I’m on the northern edge of the Bluegrass state and BBQ up here just can’t hold a candle to what I grew up eating.

 

 

 

 

 

Years ago, I came across (from where, I haven’t the slightest clue) a fantastic recipe for crock-pot BBQ chicken and it became a staple in my house. But when we started eating keto and sugar free, that recipe got shelved. Pun intended.

Over the year, I’ve slowly started adapting my old non-keto recipes into keto-friendly recipes. Eating healthy, sugar free, and/or gluten free does NOT mean you should have to sacrifice flavor, happy tummies, and good food.

 

 

This BBQ chicken recipe can be cooked in the Instant Pot, Crock-Pot, or (if you’re really pressed for time) whip up the sauce and add it to some shredded rotisserie chicken.  

I like to serve mine as nachos with pork rinds, shredded cheese, and a drizzle of extra BBQ sauce! You could also serve this as a sandwich on my Low Carb Cornbread Muffins (adding coleslaw, of course!) with a side of Keto French Fries! Heaven on a plate, I tell ya!

 

 


 

Sugar Free BBQ Pulled Chicken

Ingredients
  • 1.5 lb chicken breasts
  • 1 cup sugar free bbq sauce
  • 1/4 cup Italian dressing
  • 1/4 cup Sukrin Gold brown sugar substitute
  • pinch of salt
  • 1/4 cup of water (for IP)
Directions
  • 1 Place chicken in Instant Pot with water.
  • 2 Cook on HIGH pressure for 15 minutes.
  • 3 Manually release steam.
  • 4 Shred chicken with two forks.
  • 5 Whisk all remaining ingredients together and toss with chicken.

Notes

Alternative instructions for crock-pot: Combine all ingredients in crock pot. Cook on HIGH for 3 hours. Remove chicken and shred with two forks. Toss chicken in sauce. Turn heat to warm setting until ready to eat.
