Spicy Sausage and Pepper Breakfast Hash

Growing up a Georgia peach left me in culture shock when I moved to the Midwest at 22 years old! I moved from the Bible Belt to the land of sausage and beer! One thing I’ve learned after living nearly a decade in the Midwest is that these folks LOVE their meat!

As the true keto enthusiast that I am, I have adopted the Midwest’s affinity for good meat! Y’all have seen me talk about living in Kentucky (which I do) but I probably haven’t mentioned that I live at the tippy top of the state. In fact, our town is just south of the Ohio River. We’re just a hop, skip, and a jump from Cincinnati. 

It’s pretty cool, actually. We kind of get the best of both worlds. Bluegrass, basketball, and bourbon on one side and sausage, football, and beer on the other! One of Cincinnati’s legendary names is Queen City Sausage. They’re a huge sponsor of the Cincinnati Red’s and soon-to-be FC Cincinnati! They’re also the official hot dog of Cincinnati’s own, Skyline Chili! 

If you’ve ever visited Cincinnati, you’ve undoubtedly seen their name and probably even eaten their food! They’re WORLD FAMOUS for their goetta. So famous, in fact, that people will travel from all over the world just to come buy some goetta! You can also order their products online! Isn’t technology amazing?!

I recently had the opportunity to tour the Queen City Sausage facility. What a cool experience! Knowing where your food comes from, the people behind it, and the message of the brand is invaluable. The Queen City sausage history is a true American dream story.




We were even able to meet some local pork farmers. I love knowing where my food comes from too! Having a personal connection from farm to fork makes food taste better, doesn’t it! The Ohio Pork Council does a fabulous job educating folks on all things pork! 

QCS recently launched a new line of spicy sausages called Wicked! Let me tell you, they live up to the name! I’m a bit of a sissy when it comes to spicy foods but y’all, these sausages are GOOD! They pack a punch of heat but in the BEST way! And that comes from someone who can’t handle spicy foods! The foretaste is smokey and flavorful and the aftertaste gives you the punch of spice that only a name like Wicked can describe! 

Sausages, especially high quality ones, are perfect options on a keto diet because of the fat and protein content. I used a package of the Jalapeño sausages to make a “wicked” breakfast hash! This sheet pan meal is so incredibly easy that you could throw it in the oven while you get ready for work and have a hot, fatty, keto breakfast ready before you walk out of the door!

Ingredients
  

  • 1 package Queen City Sausage Wicked Sausages
  • 6 eggs
  • 5 oz mushrooms
  • 4.5 oz red bell pepper about 1 medium sized pepper
  • 4 oz green bell pepper about 1 medium sized pepper
  • 0.6 oz avocado oil
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/8 tsp onion powder
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 400 degrees. Spray baking sheet with cooking spray and set aside.
  • Slice peppers into thin strips. If mushrooms are not pre-sliced, slice them as well. Add to baking sheet.
  • Toss veggies in avocado oil and spices.
  • Slice sausage links on the diagonal into 1″ pieces. Add to a sheet pan.
  • Bake for 15 minutes. Remove pan from oven. Crack eggs on top of sausage and pepper mixture. Put back in the oven for 5-6 minutes, until whites are set.
