What Kind Of Sausage Is Best For These Keto Sausage Balls?

This easy, low-carb breakfast recipe requires mild ground-pork sausage. If you prefer hot sausage, that will work as well. If possible, look for sausage that is organic, nitrate/nitrite-free, and zero added sugar.

What Kind Of Syrup Is Best For Keto?

If you are trying to cut sugar from your diet, pure maple syrup is not the best option. For the best tasting and best texture keto maple syrup, I suggest ChocZero. At only 1 net carb per tablespoon, it is great for all keto breakfasts.

If you are not concerned with the total carb counts and want to make your meatballs as clean and organic as possible, I suggest using organic pure maple syrup. The change in overall carbohydrates is insignificant.

Are The Gluten-Free Bread Crumbs Necessary For This Recipe?

The gluten-free bread crumbs act as the binder for all of the ingredients. They are very easy to make and help hold the meatballs together, as well as absorb some of the fat. In a pinch, you could use crushed pork rinds but the calorie count will increase significantly.

If you don’t want to use regular bread crumbs and want to turn your breakfast meatballs low-carb, you can use coconut flour instead. Remember to double the amount of maple syrup and eggs to keep your meatballs moist. Coconut flour tends to absorb more moisture than bread crumbs.

  • Preheat oven to 425 degrees. Line a baking sheet with wire rack and set aside.
  • In a skillet over medium low heat, scramble 2 well beaten eggs until just done. Break the cooked eggs up into small pieces with a food chopper or knife.
  • In a large mixing bowl, add all ingredients. Use a wooden spoon to combine everything until just mixed. Do not over work the meat mixture.
  • Use a cookie scoop to measure 24 even sized meatballs. Roll the meatballs in your hands and place on the cookie sheet.
  • Bake for 25 minutes. Let cool 5 minutes before eating.
  • Serve with maple syrup for dipping.
