Who loves meals that take an over an hour to prepare, require ingredients you’ll only use once, and are guaranteed to cause kids to push their food around the plate with their fork?

I am pretty sure no one likes preparing those kinds of meals!

Especially when it’s a school night full of homework or after school activities.

One thing I love more than anything is a good meal that doesn’t require chopping, sautéing, or prepping.

Sure, some recipes are a labor of love and are worth the time and effort.

That’s exactly what this keto casserole is! A dump and go meal that tastes delicious and pleases the whole family!

When I am planning my menu for the week, I always try to include one meal that is halfway homemade.

If you’re not familiar with halfway homemade recipes, they’re those kind of recipes that may use already prepared ingredients like rotisserie chicken, or in this case, pulled pork.

I love these kinds of recipes because they save so much time in the kitchen and get my family eating sooner!

In this easy keto casserole recipe, I used store bought pulled pork (from Costco), frozen okra, and a store bought sugar free bbq sauce.

The only prep work for this dish is cooking your bacon and mixing up the cornbread!

Of course, if you were really pressed for time, you could use bacon bits in place of the fresh cooked bacon!

A quick bake in the oven gives you just enough time to go through backpacks, sign agendas, or pack tomorrow’s lunch box!

is okra low carb?

If you’re not from the Deep South, you may not be familiar with okra.

Okra is a low carb vegetable found in alot of southern recipes. It’s amazing fried but some like it pickled too!

It is naturally low in carbs and high in fiber making it ideal for a ketogenic diet.

I added okra to this low carb casserole to add texture and nutrients to the dish. Plus, it’s just yummy!

Okra is high in vitamins A, C, as well as magnesium!

As far as taste, it is very mild. Even picky little eaters wont notice anything! Of course, okra pieces are big enough kiddos can pick them out if they are being especially obstinate at meal time.

Store bought pulled pork is one of my secret weapons.

I usually grab a package of the Kirkland Pulled Pork every time I make a Costco run!

Keto BBQ Casserole with Pulled Pork and Bacon

Of course, I love making my own keto pulled pork (you can get that recipe here) too but sometimes momma needs a break.

Just make sure the pork you buy isn’t tossed in sugary sauces.

Pulled pork is a great way to consume healthy fat to support your ketogenic diet too!

While most pork cuts are lean, and also great for keto, the fattier shoulders and butts (ha!) are ideal.

That is why I try to incorporate recipes like this pulled pork keto casserole into my menu rotation often.

  • Preheat oven to 350 degrees.
  • In a large bowl, add the pulled pork, okra, and bacon and toss to combine.
  • Add 1 cup of the bbq sauce and toss to combine. Transfer the mixture to an oven safe skillet (I used cast iron) or 9×9 baking dish.
  • Add the remaining 1/2 cup of bbq sauce to the top of the mixture.
  • Spread the cornbread batter on top of the pork mixture.
  • Bake for 30 to 35 minutes. Let rest 5 minutes before serving.

This recipe reheats well and is great for meal prep. Store in the refigerator up to 1 week.
