What Do These Low Carb Chocolate Chip Cookies Taste Like

Low carb strawberry chip cookies taste like my original chocolate chip cookies but with a hint of strawberry and white chocolate in every bite. The cookies are sweet, soft, and chewy. These really are the best low carb almond flour chocolate chip cookies!

Why Are Freeze Dried Strawberries Used Instead of Fresh

Freeze dried strawberries are used in this keto cookies recipe for a few reasons. First, fresh strawberries are only in season during a few months of the year. While you can buy strawberries year round, they are often not as flavorful.

Second, fresh strawberries release quite a bit of liquid when they cook which would alter the consistency of your baked goods. 

Third, freeze dried strawberries add beautiful pink color and fruity flavor completely naturally so we do not need to use extracts or food coloring.

Where Can You Buy Freeze Dried Strawberries

Unsweetened freeze dried fruit is very easy to source at grocery stores and online. Major stores like Kroger, Publix, Trader Joes, or Whole Foods carry many different dried fruit options. These are often found in the snack aisle or in the same section as salad toppers (in my store that is near produce). I have also found them in the baby food sections. Of course, you can also find freeze fruit on Amazon as well but they may be a slightly hire price.

Are Strawberries Keto Friendly

Yes, strawberries are keto friendly. The berry family (strawberries, raspberries, and blackberries) are all the lowest carb fruit options you have when following a ketogenic diet, falling around 6 net carbs per 100 grams per the USDA

Since fruit is high in fructose (glucose), we need to limit the amount of fruit we eat in order to stay in ketosis. Remember that ketosis is a metabolic state in which the body burns fat for energy instead of glucose. If we give our bodies too much glucose, we may not stay in ketosis. Everyone’s body has a different threshold for how much glucose they can withstand and maintain ketosis.

So when it comes to strawberries, even freeze dried strawberries like in this recipe, enjoy them guilt free while being mindful of your carb intake for the remainder of the day!

Ingredients

  • 8 tablespoons butter, softened
  • 1/2 cup granulated monkfruit
  • 1/4 cup golden monkfruit
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1/4 cup dark chocolate chips (I use this)
  • 1/2 cup white chocolate chips (I use this)
  • 1.5 ounces freeze dried strawberries, roughly broken up

Instructions

  1. Preheat oven to 350 degrees. Line a cookie sheet with a silicone mat or parchment paper.
  2. In the bowl of a stand mixer with the paddle attachment, beat the butter, granulated monkruit, and golden monkfruit until fluffy, about 1 to 2 minutes
  3. Add the egg and vanilla and beat until combined.
  4. Add the almond flour, baking powder, baking soda, and salt and beat until combined.
  5. Add the chocoalte chips and strawberries and mix and combined.
  6. Use a medium sized cookie scoop to portion out the cookie dough into 12 balls. Roll each cookie dough ball in your hands and then gently flatten with two fingers on the cookie sheet.
  7. Bake for 8 minutes for a soft cookie or 10 minutes for a crispier cookie.
  8. Let the cookies cool for 5 minutes on the cookie sheet before transferring to a wire rack. Let the cookies cool and set before picking up.
  9. Repeat step 6 and 7 for the remaining dough.

How To Make These Keto Cookies with Almond Flour

Using a stand mixer or hand mixer helps to make whipping up this keto cookie dough super fast! However, you can also make this cookie dough by hand with a mixing bowl and rubber spatula! These low carb cookies are easy enough for young bakers to help with too! 

Can Coconut Flour Be Used Instead of Almond Flour

No, coconut flour may not be substitute for the almond flour. Coconut flour and almond flour are not equivalent substitutes because their baking properties are vastly different. 

Does This Keto Cookie Dough Need To Be Chilled

Chilling cookie dough helps with spreading during baking but it is not absolutely necessary. As you can see in my original keto chocolate chip cookie dough recipe, there is not a huge difference in chilled versus room temperature dough. Room temperature cookie dough yields a slightly softer cookie.

Can Unused Cookie Dough Be Saved For Later

Absolutely! Keep unbaked cookie dough wrapped up in plastic wrap or baggie in the refrigerator up to one week or the freezer up to 3 months. Cookies that have been baked but not yet eaten may also stay in the freezer for up to 3 months.
