So, I’m going to be completely honest and admit that I’ve been binge watching “The Sopranos” recently (yes, I know. I’m 20 years late) and subsequently have quite a few Italia-inspired dishes coming soon to the blog. Carmela, y’all, I’m a fan! All of those pasta dinners they eat have me jonesing for some keto Italian food.

What’s more Italian than pizza? Okay, well I guess there is some controversy that it actually originated in China because of something Marco Polo brought with him on an exploration. Who knows! What I do know is that I like pizza. A lot.

I also really like soup. It may be March but here in Kentucky, it snowed on the 1st and it’s been sub-zero temperatures. In other words, it’s still frigid and not springlike, which makes me want warm food.

Why You Will Love This Recipe

  • Kids like pizza, and my kids, for the most part, will eat soup if I give them something to dunk in it. Enter: low-carb pizza soup.
  • Personally, I’m a fan of supreme pizza. A little veggie, a little meat, and lots of cheese! That’s my favorite pie! This soup mimics that.
  • Normally I would make a “fat head” pizza or [shamelessly] scrape the toppings off of delivery pizza but sometimes I a) don’t want to fool around with cooking and b) spend the money on take-out. You don’t have to do either with this recipe!
  • I used my trusty Instant Pot to make this keto-friendly dinner in just 15 minutes but of course, you can use your slow cooker as well. My Instant Pot has become my new kitchen bestie! 
  • I also love this recipe because it would be fantastic for parties, potlucks, or to share with a sick friend/neighbor! It is a fun alternative to the same ol’ soups you usually share.
  • You may also notice some yummy breadsticks in the photos! They’re kind of similar to Crazy Bread from Little Caesar’s. You can make them very easily while your soup is cooking! Keto garlic bread? Yes, please!

Ingredients

  • 3 cups vegetable broth
  • 13 oz low-carb pizza sauce
  • 2 oz black olives
  • 3 oz pepperonis
  • 4.5 oz chopped green bell pepper
  • 2.5 oz chopped red onion
  • 2 tsp Italian seasoning
  • pinch of salt
  • mozzarella cheese, for topping (optional)

“Fat Head” Breadsticks:

  • 1 batch fat head dough
  • 2 tbsp melted butter
  • 2 garlic cloves, minced
  • grated parmesan cheese

Instructions

  1. To the inner pot of an Instant Pot, add all ingredients (except cheese). Stir to combine.
  2. Close the lid and seal the vent. Cook on high pressure for 15 minutes. Quick release the steam.
  3. Top each serving with shredded mozzarella cheese, if desired.
  4. Serve with fat head garlic breadsticks, if desired.

“Fat Head” Breadsticks:

  1. Prepare your “fat head” dough as outlined here.
  2. Roll it into the desired shape and thickness.
  3. Mix the minced garlic with the butter. Drizzle the butter on top of the pizza dough and use a silicone brush to cover the bread. Sprinkle a little grated parmesan cheese on top.
  4. Bake for 8-10 minutes per “fat head” recipe instructions.
  5. Cut into 8 “sticks”. Garnish with fresh grated parmesan.

Variations

Feel free to play around with the toppings in this soup just like you would with a regular pizza! A sausage and bacon version would be delicious, too! Approach it like you would a traditional pizza. What do you usually order? You could also get creative with the broth. After all, not all pizzas feature tomato sauce. You could use chicken broth and add pieces of chicken in the soup, along with some pesto. Of course, you’ll need to recalculate macros if you deviate from the original recipe but that is really easy to do with a fitness app!

FAQs

If I want half/double the amount in the recipe, can I just half/double the ingredients?

Yes, it should be that easy.

Can I make this on the stove?

I haven’t tried but I don’t see why not. Follow the recipe as above, just replace the Instant Pot with, say, a Dutch oven, and set it to MEDIUM. It will obviously take much longer and you’ll need to keep an eye on it.

If I used sausage would I just slice it?

You could do that, or you could open up the sausage casing and crumble the meat.

How To Store Instant-Pot Pizza Soup

Let the soup cool completely. Put it in an airtight container and put it in the fridge where it will keep for up to 4 days. If you would like to freeze the soup, you can do so for up to 3 months. To reheat the soup, let it thaw in the fridge or in the microwave, then cook on MEDIUM on the stove.
