Who says brussel sprouts should only be enjoyed when roasted? Not me! Because brussel sprouts are members of the cabbage family, they’re fabulous uncooked! In fact, I prefer them that way! This brussel sprout salad with hot bacon dressing is going to be your new favorite keto brussel sprout recipe!
more than just another keto brussel sprout recipe
Brussel sprouts have really made a comeback in the last couple of years. Like fashion, I guess vegetables have their time to shine too.
The first time I had brussel sprouts, we were about 2 weeks into our ketogenic diet. I was detoxing from sugar, hangry, and these little baby cabbages did not hit the spot.
I just did not understand the fascination with these pungent little buds of stank. So, I didn’t eat them again for a very long time.
What I have since learned about brussel sprouts is that preparation is crucial. And I don’t mean preparing yourself for eating them.
But rather how you prepare the brussel sprouts.
Roasted brussel sprouts are obviously very popular. Restaurants are even getting in on the hype and offering them as side dish options.
no heat required keto brussel sprout recipe
When it’s 90 degrees outside, I don’t even want to think about turning on my oven.
That’s why when I realized that brussel sprouts were even better as a salad base, I jumped on creating this keto brussel sprout recipe.
If you are a true brussel sprout fan, you’re going to love this easy keto salad recipe.
Plus, we all know that bacon makes virtually any recipe better so how bad could this be? Have I ever steered you wrong?
I am all about the no cooking required recipes. I have several on the blog too! Have you tried any of them?
keto hot bacon dressing
The keto hot bacon dressing is really the star of this low carb brussel sprout salad.
It’s so good that you could even use it in a regular tossed salad or some simple dressed greens.
The dressing is a little bit tangy (from the dijon), a little bit sweet (from the maple syrup), and a lot a bit delicious!
I love using this ChocZero maple syrup in all of my recipes! It’s sugar free, sugar alcohol free (i.e. no erythritol), and only 1 net carb per tablespoon!
If you order from ChocZero, you can use code “ketoinpearls” for an extra 10% off. (not valid on Amazon)
I guess I fibbed a little when I said “no heat required” because we do have to pan fry a little bit of bacon so we can have fresh bacon grease, but trust me, it’s worth it!
The bacon grease adds great flavor and healthy fat to the dressing which is perfect when you follow a ketogenic diet.
The acid in the dressing breaks down the shredded sprouts so they’re slightly soft but keep they’re signature bite.
on the go approved
Whether you need side dish to take to Bunco, the church potluck, or to work in your lunch bag, this keto brussel sprout salad is a winner!
Actually, I thought it tasted better after sitting a day in the fridge. Just let it be known that if not consumed immediately, the dressing will thicken up as the bacon grease solidifies. It’s still good though, promise!
