Brussel sprouts have really made a comeback in the last couple of years. Like fashion, I guess vegetables have their time to shine too.

The first time I had brussel sprouts, we were about 2 weeks into our ketogenic diet. I was detoxing from sugar, hangry, and these little baby cabbages did not hit the spot.

I just did not understand the fascination with these pungent little buds of stank. So, I didn’t eat them again for a very long time.

But rather how you prepare the brussel sprouts.

The keto hot bacon dressing is really the star of this low carb brussel sprout salad.

It’s so good that you could even use it in a regular tossed salad or some simple dressed greens.

The dressing is a little bit tangy (from the dijon), a little bit sweet (from the maple syrup), and a lot a bit delicious!

I guess I fibbed a little when I said “no heat required” because we do have to pan fry a little bit of bacon so we can have fresh bacon grease, but trust me, it’s worth it!

The bacon grease adds great flavor and healthy fat to the dressing which is perfect when you follow a ketogenic diet.

The acid in the dressing breaks down the shredded sprouts so they’re slightly soft but keep they’re signature bite.

Actually, I thought it tasted better after sitting a day in the fridge. Just let it be known that if not consumed immediately, the dressing will thicken up as the bacon grease solidifies. It’s still good though, promise!

  • Rinse and dry the brussel sprouts. Slice off the woody end and discard. Cut the brussel sprout in half lengthwise. Lay the flat side of the sprout face down and then slice lengthwise into thin strips. Repeat with all of the sprouts. Alternatively, shred the brussel sprouts on a wide grater.
  • Cut the raw bacon into small pieces. Heat a skillet over medium heat and fry the bacon pieces until crisp.
  • Transfer the bacon pieces to the bowl of sprouts. Reserve the bacon grease and pour into a mason jar.
  • Add the remaining ingredients to the mason jar. Tighten the lid and shake vigourously until the dressing has emulsified and smooth. You an also do this in a food processor if desired.
  • Pour the dressing over the sprouts when ready to eat. Toss to coat.
  • Serve immediately. Garnish with extra bacon, if desired.

Notes

Avocado oil may be subsituted for the evoo. Bacon may be cooked in the microwave to truly skip the frying pan but be sure to collect the grease for the dressing.
