If sausage balls and potato soup got married, this would be their love child. This creamy keto sausage soup tastes just like your favorite sausage ball in soup form. Crumbled sausage, cheese, cauliflower, and cream come together for a bowl of comfort that’s perfect for breakfast, lunch, or dinner.

One of my favorite winter meals before I adopted a low carb diet was a bowl of cheesy potato soup with crumbled up sausage balls. Oh my word, it is heavenly. If I close my eyes I can almost taste it now.

Sadly, it has been an incredibly long time since I’ve eaten that meal. I genuinely miss it. Partially because it was one of those suppers that literally no one complained about eating. I know you know what I’m talking about.

However, the other day my little food blogger lightbulb went off in my head and I had the novel idea to recreate that meal into a low carb and keto friendly recipe. This creamy keto sausage soup is what happens when you marry potato soup and sausage balls. Enjoy it for breakfast, lunch, or dinner- it’s really that delicious!

What Does This Creamy Keto Sausage Soup Taste Like?

Have you ever had a sausage ball? The kind with a whole bunch of Bisquick and shredded cheddar cheese? Okay, now what about potato soup? Now, imagine you had a bowl of potato soup and crumbled up some sausage balls into it. That is exactly what this creamy keto sausage soup tastes like!

Use Your Instant Pot To Make This Creamy Keto Sausage Soup In A Flash

A few years ago, the Instant Pot really was a gift from above. That little device has saved me so much time in the kitchen over the years. Pull out your IP for this creamy keto sausage soup so you’re eating in under half an hour. Plus, since we can complete all of the recipe steps in the same pot, you’ll only have one dish to wash! If you’re more of a crockpot fan, I’ve also covered instructions for you in the recipe card below.

Ingredients

This recipe is super easy to make and needs only seven (plus one optional garnish) for it to come together. Here’s what you’ll need:

  • 1 lb hot ground sausage
  • 4 cups chicken broth
  • 1 tsp salt
  • 16 oz cauliflower florets
  • 1 cup heavy cream
  • 12 oz softened cream cheese
  • 2 cups shredded cheddar cheese (or more, to garnish)

How To Make Creamy Keto Sausage Soup

  1. In a skillet over medium high heat, brown the sausage until it’s no longer pink. Use a wooden spoon to break the sausage up into small pieces as you cook. Alternatively, you may use the sauté function on the Instant Pot to cook the sausage. You do not have to drain the grease unless desired.
  2. Transfer the sausage to the Instant Pot. Add the broth, salt, and cauliflower. Stir to combine.
  3. Close the lid and seal the vent. Cook on high pressure for 20 minutes. Quickly release the steam and press cancel.
  4. Remove the lid. Use a potato masher to gently break apart the cauliflower into small pieces. Add the heavy cream, cream cheese, and cheddar cheese, reserving some of the cheddar for a garnish and stir until melted and combined.
  5. Top with cheddar cheese before serving, if desired.

If you’re using a crockpot instead of an Instant Pot, follow steps 1 and 2. Cook on low for 5 hours or high for 3 hours. When there is 30 minutes left on the timer, add the cream cheese and stir. When the timer goes off, follow steps 4 (adding just the cream and cheddar) and 5.

My favorite way to eat this creamy keto sausage soup is with a slice of my keto cornbread and some shredded cheddar cheese on top. If I am serving this soup for supper, I like to add a robust salad alongside our cornbread. If you’re enjoying this for breakfast, try putting a fried egg on top!

Is Creamy Sausage Soup Keto?

The key to making this delicious soup keto-friendly is in the use of cauliflower, rather than potatoes, which brings your carb count down. Otherwise, this soup is keto-friendly, baring only 6 net carbs.

How Does Creamy Keto Sausage Soup Differ From Italian Sausage Soup?

The biggest difference between creamy keto sausage soup and Italian sausage soup is the presence of carbs. Italian sausage soup, while similar, often incorporates a grain like rice or pasta, which can increase your carbs and gluten, a keto no-no. How to Store Creamy Keto Sausage Soup?

Storing in the fridge:

  1. Cool soup to room temperature.
  2. Use airtight containers for storage.
  3. Refrigerate at 35°F to 40°F (1.7°C to 4.4°C).
  4. Consume within 3-4 days.

Storing in the freezer:

  1. Cool soup to room temperature.
  2. Pour into freezer-safe containers, leaving headspace for expansion.
  3. Label with date and contents.
  4. Freeze for up to 2-3 months.
  5. Reheat on stovetop or microwave, whisk or blend if needed.

  • Transfer the sausage to the pot. Add the broth, salt, and cauliflower. Stir to combine.
  • Close the lid and seal the vent. Cook on HIGH pressure for 20 minutes. Quick release the steam. Press cancel.
  • Remove the lid. Use a potato masher to gently break apart the cauliflower into small pieces. Add the heavy cream and cheeses and stir until melted and combined.
  • Top with cheddar cheese before serving, if desired.

Notes

To make in the crockpot: follow steps 1 and 2. Cook on low for 5 hours or high for 3 hours. When there is 30 minutes left on the timer, add the cream cheese and stir. When the timer goes off, follow steps 4 and 5.
