Tartar sauce is a condiment made of mayonnaise, dill, lemon, tarragon, and capers. It is often served with fish and other seafood dishes. Most commonly, fried fish, like fish and chips, are accompanied with tartar sauce.

Tartar sauce is a mild and light condiment. It is flavored with dill, lemon, garlic, and tarragon. Greek yogurt is used as the base for the sauce to provide a hint of tang, but not as much as sour cream does. Though tartar sauce has dill pickles in it, the sauce is not overly “pickle-y”.

Tarragon is an herb that is commonly used with fish and seafood. It light but has a very slight licorice scent, at least to me. However, it does not taste like licorice at all. You can find tarragon in any grocery store in the spice aisle. If possible, get organic and non-GMO verified dried tarragon for the cleanest possible ingredient. 

Can Sour Cream be Substituted for the Greek Yogurt?

Sour cream may be substituted for the plain greek yogurt but it will change the consistency and overall taste of the sauce. Greek yogurt is thicker than sour cream which provides a rich and heartier condiment. Sour cream has a more distinct flavor than greek yogurt so it will stand out more if used.

Can Mayonnaise be Substituted for the Greek Yogurt?

It is not recommended to use all mayo for this tartar sauce recipe. Instead, you can use half mayonnaise and half greek yogurt if you prefer. To keep this healthy tartar sauce clean, use a mayo that is soybean oil free.

Ingredients

  • 4 tablespoons plain greek yogurt
  • 2 teaspoons dill pickle juice (from the jar)
  • 2 teaspoons lemon juice
  • 1 medium sized dill gherkin, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried tarragon

Instructions

  1. Combine all ingredients in a small bowl. Chill until ready to serve.

    Notes

    This sauce tastes best when chilled for at least one hour before serving.
