Easy Keto Crockpot Pork Loin

There is something about fall that makes me crave a sweet and tender pork loin. Before keto, my family loved pork and apples in the fall. We don’t eat apples anymore but I wanted to capture some of those autumnal flavors in this keto crockpot pork loin recipe.

This sweet and tangy keto crockpot pork loin is as easy, dairy free, and uses basic low carb ingredients. A perfect family friendly keto recipe.

Pork is one of my favorite meats to buy for my ketogenic lifestyle.

It’s not as expensive as beef and it’s more flavorful than chicken. Cuts like this pork loin are often on sale, too!

And because pork is so lean, it doesn’t take very long to cook (unless we’re talking about bbq).

Most people are familiar with pork chops but there can sometimes be confusion over pork loin and pork tenderloin.

Is there really a difference and are they interchangeable in recipes?


Yes and no!

The tenderloin is a long and lean cut of the meat. They have very little fat (i.e. tender) and are typically higher in price.

You use pork tenderloin in recipes for things such as pork medallions, like in this this recipe.

Alternatively, the pork loin is a fattier cut of the pig that is best for roasting and slow cooking, like we’re doing in this keto crockpot pork recipe.

Pork loin is typically less expensive than a tenderloin as well.

It also takes a bit longer to cook than the tenderloin to yield a juicy and tender bite.

I love using the pork loin in keto recipes because of the healthy fat that is rendered from the meat.

It’s just enough fat to keep the dish lean but flavorful, perfect for a keto pork loin recipe!

The tang in this recipe comes from apple cider vinegar and dijon mustard.

This low carb pork loin recipe pairs well with any of your favorite low carb vegetable dishes.

Personally, I love my brown sugar and bacon brussel sprouts to compliment the sweetness of the pork.

Or you could go for a classic mashed cauliflower and side of peas. (yes, peas are low carb!)

You can use your leftover pork in a salad the next day, a low carb breakfast burrito, or omelette! It reheats really well!

Easy Keto Crockpot Pork Loin

Ingredients
  

  • 2 pound pork loin roast not tenderloin
  • 1 tablespoon dijon mustard
  • 1.5 teaspoons salt
  • 1/4 cup brown sugar monkfruit [ I use this]
  • 1/4 teaspoon nutmeg
  • pinch of pepper
  • 1 tablespoon sugar free maple syrup [ I use this]
  • 3 tablespoons apple cider vinegar
  • 1/4 cup water

Instructions
 

  • Place the pork loin fat side up in the crockpot (or Instant Pot if using).
  • Use a basting brush to evenly brush on the dijon mustard on top of the pork loin. Be sure to coat the entire top.
  • Sprinkle the salt, brown sugar, nutmeg, and pepper on top of the pork loin. If some falls into the pot, that is okay.
  • Drizzle the sugar free maple syrup on top.
  • Add the water and apple vinegar to the pot, but not directly on top of the pork loin.
  • Cook on low for 6 hours or high for 3 hours.
  • If using an Instant Pot, cook on high pressure for 45 minutes and quick release the steam.
  • Shred the finished meat with two forks. Use a spoon to dress the finished meat with the reserved pan juices. Garnish with fresh parsely, if desired.
