This is a generic term that is unregulated by the FDA so we don’t really know what it means or what is in it. Unhealthy oils, sugar, and fillers are also common.

How To Make This Keto Coleslaw Recipe

This basic keto coleslaw recipe is incredibly easy to prepare. Chances are you already have all the ingredients you need to make this healthy coleslaw at home. Mayonnaise is the main wet ingredient. Buying a high quality mayo, or making your own, will keep this keto coleslaw clean and healthy. This is my favorite avocado oil mayonnaise. You will also need lemon juicedill, garlic powder, and a small amount of granulated sweetener of your choosing. I prefer to use this in my coleslaw. You can choose to shred your own cabbage or buy a bag that is pre-shredded.

Everything will get combined in a large mixing bowl and chilled until ready to serve. I like to use this chopper tool to make my cabbage slightly smaller. 

The health benefits of cabbage are excellent for eating clean. Cabbage is naturally lower in carbs making it great for a keto diet.

What Type of Cabbage is Best for this Basic Coleslaw Recipe

If choosing to shred your own cabbage, green cabbage works best for this recipe. In a pinch, you could also shred brussels sprouts. Red cabbage can also work but it is slightly higher in carbs, if that matters to you.

This keto coleslaw recipe is fresh, light, and clean tasting. The fresh lemon juice and herbs make this creamy coleslaw taste much cleaner than a prepared one from a store. There is a hint of sweetness to balance the savoriness of the herbs too. I think this healthy coleslaw tastes quite a bit like the (now removed) Chick-Fil-A coleslaw!

Ingredients
  

  • 1 16 ounce package coleslaw mix
  • 1 cup mayonnaise
  • 3 tablespoons water
  • 2.5 teaspoons lemon juice
  • 1/2 teaspoon dried thyme
  • 1.25 teaspoons garlic powder
  • 2.5 teaspoons erythritol

Instructions
 

  • Add the coleslaw mix to a large bowl. Use a handheld chopper to finely chop the cabbage into small pieces, if desired.
  • In a small bowl, whisk the remaining ingredients until combined.
  • Pour the dressing over the coleslaw and toss to combine.
  • Store in an airtight container in the refrigerator up to 1 week.

Notes

If you have time, let this coleslaw sit in the fridge 1 hour, up to over night, before serving. If you're pressed for time, you can serve immediately.
