I’ll have this great dinner planned, get to cooking, and then think “oh gosh, what are we going to eat with it”. 

In times like these, it helps to have a few easy low-carb side dishes in your back pocket.

Of course, we can always toss a bag of frozen veggies into the microwave but that’s boring! When all it takes is an extra 10 minutes to create this creamy keto cauliflower rice, why not go all out!

  • Frozen cauliflower rice is one of the best keto foods you can stock in your freezer! You can use cauliflower to make so. many. things (I see you snarky memes) these days. Whenever I’m making a Costco run, I always grab a bag of frozen cauliflower. Those little bags of pearls (pun totally intended) have saved me more times than I can count come dinner time.
  • With frozen cauliflower rice, you can make keto Mexican rice, keto fried rice, mashed cauliflower, or even my taco salad skillet. It really is the holy grail of all keto side-dish ingredients.
  • What I liked most about this easy keto side dish is that even though I used *gasp* a vegetable, my kids gobbled this stuff up! In fact, my pickiest eater, the 3-year-old, asked for seconds! What?!? And then, he asked me to make it again every day for the next week. I think this recipe was such a hit with my kids because it tasted nothing like cauliflower. In fact, with the exception of no cheddar cheese, it almost tasted like a white mac and cheese. I wore my SuperMom cape for the following couple of days.

How To Make Your Own Creamy Cauliflower Rice

Fixing your own creamy keto cauliflower rice couldn’t be easier. Starting with a bag of frozen cauliflower rice, you’re simply going to add butter (yum!), garlic (yum!), half n half, salt, pepper, and cream cheese. Give it some love (a.k.a. stir it) until it’s all thick and creamy, and voila, you have a fantastic 15-minute keto side dish to accompany virtually ANY of your favorite keto meals.

Ingredients

  • 16 oz frozen cauliflower rice
  • 3 tbsp butter
  • 2 garlic cloves, minced
  • 1.5 tsp salt
  • 1/2 tsp pepper
  • 1 cup half ‘n’ half
  • 4 oz cream cheese, softened
  • fresh chives, for garnish (optional)

Instructions

  1. Microwave cauliflower rice according to package directions.
  2. In a skillet over medium-low heat, melt the butter.
  3. Add the minced garlic and sauté 1 to 2 minutes until fragrant.
  4. Add the cooked cauliflower rice, salt, and pepper and stir to combine.
  5. Add the half ‘n’ half and cream cheese. Stir to combine.
  6. Stirring continuously, let the mixture cook 8 to 10 minutes until all liquid is absorbed and the rice is thick and creamy.
  7. Garnish with fresh chives, if using.

What To Serve Creamy Keto Cauliflower Rice With

You have a lot of options. Serve your creamy cauliflower rice with my easy keto pork loin (pictured below). In fact, it goes well with many grilled or pan-seared meats, be it chicken, steak, or fish. You could also do a stir-fry along with shrimp or tofu. A curry with this as the base might be nice. You could also go Mexican and add this to tacos, or add it to “pasta” like zucchini noodles or spaghetti squash. This creamy cauliflower rice would also be fantastic with my parmesan crusted chicken with bacon cream sauce!  

FAQs

Can I substitute anything for the cream cheese?

Yes, some readers have had luck using 4 ounces of Boursin cheese instead. Another used 3/4 cup of cream as they didn’t have enough cream cheese on hand to make the recipe.

Can I use broccoli instead of cauliflower?

Yes, though you’re significantly changing the recipe. Still, the basics should remain the same. Obviously the taste will change and the consistency but if you prefer broccoli, why not .

My rice is very dry. What can I add?

I would suggest adding some more half ‘n’ half or butter. Also, watch your cooking times; you could be leaving it on the heat for too long.

How To Store Creamy Keto Cauliflower Rice

First, let it cool to room temperature. You can store the cauliflower rice in an airtight container or plastic bag and put it in the refrigerator for up to 4 days. Or you can freeze it for up to 3 months. Be sure to thaw it out before reheating it. Because, as I’ve said, this side dish is one of my go-tos, I store it in smaller servings and take one out when I need a quick and easy meal for myself.
