diet culture has it all wrong

Back in the day when I was a keto newbie, I avoided certain foods because I knew the protein count was high and would make me “go over” my macros.

In fact, I never wanted to use protein powders, eat extra broccoli (it has a surprisingly high protein content), or eat the bigger steak because I was afraid I would get knocked out ketosis or, *gasp*, gain weight.

And forget about products with added protein! I mean, who in their right mind wants extra to eat protein on keto?!

Eye roll, eye roll, eye roll.

Seriously, I thought too much broccoli would make me gain weight.



 

THAT is what 20-something years of diet culture taught me. Skimp on the broccoli, Anna.

Lord have mercy on me for I know not what I have done.

my new chocolate obsession

If you’ve been hanging around this blog or Instagram for the last year or so, you know I am mega big supporter and fan of Further Food products!

 

 

When my friends over at Further Food told me they were launching chocolate collagen peptides, I knew I had to make some keto chocolate cookies with it!



 

Of course, I’ve also had keto mocha lattes and keto chocolate milk with this new chocolate collagen but these keto chocolate cookies might by my favorite way to use it!

When you’re baking without gluten, you must add a gluten-like substance to achieve the same effect that gluten would have (i.e. rise, chew, stretch, etc.).

In this case, we use collagen to fill the gluten void! 

 

 

Collagen is very similar to gelatin and when you bake with it, your final product will have a nice chew.

Not chewy like a jelly bean but chewy like a soft cookie should be!

These chocolate keto cookies are no exception!

In fact, I immediately told my husband these were like a keto brownie cookie! 

I wanted to dub these “brookies” until I Googled that term and learned that a “brookie” is some kind of brownie/cookie bar. Oh well!

 

 

Actually, you could totally bake these like a brownie if you wanted to skip the scooping step and then you really would have a keto brookie!

why didn’t I just use cocoa powder and gelatin in this recipe?

Because, silly, the chocolate collagen peptides give me an extra boost of protein (my hair will thank me) and immune boosting adaptogens (from the Reishi mushrooms)!

Sure, I could have gone the “traditional” route but that’s no fun!

Chewy Keto Chocolate Cookies

Chewy Keto Chocolate Cookies

Yield: 14 cookies
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Kind of a brownie, kind of a cookie. These chewy keto chocolate cookies are only 1.4 net carbs and almost 7 grams of protein each!

Ingredients

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl or stand mixer, use the paddle attachment to cream the butter and monkfruit until fluffy, about 1 minute.
  3. Add the almond flour, baking soda, baking powder, chocoalte collagen, and salt and mix until combined.
  4. Add the vanilla extract and egg and mix again.
  5. Use a cookie scoop to scoop out 14 even sized cookies. Roll in between your hand and place on the baking sheet. Use two fingers to gently press the cookies down. Top with sugar free chocoalte chips, if using.
  6. Bake for 10 to 11 minutes or until set.
  7. Let the cookies cool on the baking sheet for 2 minutes before removing to wire rack to cool completely.
